The market is like the stock market, you never know who is on the other side. You can set pricing as you wish and hope that there will be someone who wants to buy or sell for the price you set. New players are limited to market price. It is too complex to expect them to know how to set pricing.
You can of course set up contracts with people you know and we intend to add shops to the game where you can sell directly to others.
