It is recommended to look at the game Documentation to see the specific strengths and weaknesses of each weapon (Fighter Planes, Drones, Interceptors in your example) to see exactly what they excel at and where they struggle. C3 unit composition will always be the default weapons for a unit, so you would expect their Interceptor Wing unit to have 310 Interceptors and 30 AA Missile Batteries. You can customize your units however you'd like using any of the possible weapons for a unit, for example your Air Force Attack and Bombing Wing can be changed around to have up to 665 of any combination of Attack Drones, Attack Helicopters, Precision Bombers, and Fighter Planes. Check out each of those weapons in documentation to see which is best suited for the goal in front of you, or try to find other options from other units. You know from reading documentation that Interceptors can obviously fire back against any air-based weapon, but they're completely ineffective against ground-weapons. So with the goal of taking down Interceptors, perhaps it is worth checking what weapons can destroy them (still listed in documentation) and building a unit around that to take down the Interceptors more cleanly, allowing your air units to focus elsewhere.
